Wellness Wednesday! Blueberry Squares Recipe

Blueberry squares

Ingredients (base)                  Ingredients (filling)

1.5 cups flour                    3 cups blueberries

1.5 cups rolled oats                1/2 cup white sugar

¾ cups brown sugar                2 tbsp cornstarch

½ tsp baking powder                1 tbsp fresh lemon juice

½ tsp cinnamon

1 cup cold margarine or butter cut into chunks

 

Directions

Grease a 7 x 11 inch baking pan.  In a food processor blend the flour, oats, brown sugar baking powder and cinnamon.  Pulse to blend for 20 seconds.  Add the cold margarine chunks and pulse to cut the butter or margarine into the dry ingredients until you have a crumbly mass (not dry but not sticking together).  Toss the berries together with the sugar, cornstarch and lemon juice.  Spread / pat (lightly) half of the oatmeal mixture into the bottom of the pan.  Top with the blueberry  / cornstarch mixture as evenly as you can.  Sprinkle the remaining oatmeal mixture on top of the blueberries.  Chill the pan for 30 minutes (important).  Set oven to 350 degrees F.  Bake for 30 to 40 minutes or until fruit starts to bubble.  Cool pan completely before cutting or refrigerate for 2 – 3 hours before cutting
