Wellness Wednesday! Linguini Primavera with Black Beans Recipe!

Ingredients

1 small Spanish onion julienned

1 tsp garlic powder

½ tsp basil

1 tsp oregano

2 tbsp olive oil

1 red peppers julienned

1 green pepper julienned

2 large carrots matchstick cut

2 stalks celery chopped

1 cup small broccoli florets

2 cups diced zucchini

1 14oz cans tomato sauce

1 14 oz can diced tomatoes

8 oz black beans rinsed, strained and pureed

2 lbs whole grain linguini

salt and pepper to taste

 

Directions

Rinse and drain the black beans. Puree the beans in a blender or food processor. In a large pot, heat the olive oil. Add the celery, carrots, onion and peppers. Saute until just tender. Add the tomato sauce, diced tomatoes and black bean puree. Add the garlic, oregano and basil and simmer on medium low heat for 30 minutes. While the sauce is simmering, bring a large pot of salted water to a boil. Add the linguini and boil until the noodles are tender (about 8 minutes). While the water is boiling, add the broccoli and zucchini to the sauce. Continue to simmer for 10 minutes. Strain the cooked pasta. Do not rinse the pasta. Add the sauce to the cooked pasta and toss gently until combined. Serve with fresh grated parmesan cheese.
