Irish Stew
Our Head Chef’s delicious Irish Stew recipe is kid-approved! Ingredients- 4 servings 1 lb (454 g) beef tenderloin 2 cups (large) diced carrots 2 cups (large) diced potatoes 1 cup diced turnips 1 medium onion diced ½ tsp garlic powder ¼ tsp pepper ½ tsp thyme 2 tbsp beef soup base 1 tbsp corn starch ½ cup cold water 2 tbsp canola oil Directions- Mix the beef base, corn starch, pepper and garlic together in a small bowl. Wash and cut the vegetables. Toss them in thyme and canola oil. Roast the vegetables at 350 degrees F for 45 minutes. R Set aside until beef is ready. Slice the beef tenderloin into thin slices (about ¼”). Place the sliced beef into a bowl. Add the seasoning / beef / cornstarch mix to the sliced meat. Mix thoroughly with the seasonings. Heat a skillet with canola oil. Place the beef into the hot pan and stir fry until cooked. The meat will generated a gravy but you’ll need to add the water a little at a time to prevent over thickening. Combine the cooked meat with the roasted vegetables and return to the oven roasting covered at 275 degrees F for 2 hours. Serve with warm, crusty buns
