Swedish Meatballs

Homemade Swedish Meatball Recipe

 

Ikea should no longer be your go-to for a healthy Swedish Meatball. Try this kid-tested recipe created by our head chef.

Ingredients

2 lbs medium ground beef

4 oz bread crumbs

1 egg beaten

1 tsp basil

1 tsp oregano

1 tsp garlic powder

2 cups boiling water

2 tbsp beef soup base

1 tbsp corn starch

250ml (1 cup) 35%  cream

Directions

Combine the beef, egg, bread crumbs basil, oregano and garlic powder together and mix thoroughly.  Preheat your oven to 300 degrees F.  Line a cookie sheet or shallow pan with baking paper.  Using a half tablespoon measure, scoop out the meat mixture into the palm of your hand and roll until a small meatball is achieved.  Place the meatball on the cookie sheet and continue until all of the meat is used.  You should be able to get 60 to 65 meatballs out of 2 lbs of beef.  Bake the meatballs at 300 degrees F until they are fully cooked.  Remove them from the oven and let cool for 5 minutes.  Remove the meatball from the tray and set aside.  In a sauce pan, bring the water to a boil.  Add the beef soup base and corn starch to the water and stir vigorously.  The sauce will start to thicken.  If it becomes too thick, add a bit more water.  If too thin, add a bit more cornstarch.  Add the 35% cream to the sauce and stir. Once the sauce is ready, add the cooked meatballs to the saucepan and allow to simmer on medium low heat for 20 minutes.

Serve with your favourite pasta or rice.

 

Note:  If you are pressed for time, you can purchase cooked meatballs from the grocery store and add them to the sauce.
