Broccoli and Leek Quiche

1 frozen 10 inch pie shell

1 cup steamed broccoli

½ cup diced leeks

1 cup shredded cheddar cheese

4 eggs beaten

¼ cup milk



Preheat your oven to 350 degrees F.  Place your leeks, broccoli and cheese into the frozen pie shell.  In a small bowl, lightly beat 4 eggs with ¼ cup of milk.  Pour this mixture over the cheese, leek and broccoli mixture.  Place the quiche in the oven and bake for 35 minutes at 350 degrees F.  Remove from oven and let stand for 5 minutes before cutting into portions.

Serve with salad or steamed vegetables


Makes 6 to 8 portions
