Wellness Wednesday! Meatball Stroganoff Recipe

Meatball stroganoff with steamed rice and waxed beans

Ingredients

2 lbs ground beef lean

½ cup bread crumbs

½ tsp thyme

½ tsp fresh garlic crushed

2 cups beef broth

250 ml 35% cream

2 tbsp cornstarch

 

Directions

Combine the beef, garlic, thyme and bread crumbs together completely.  Using a teaspoon, scoop some meat mixture into the palm of your hand and roll into a ball.  Repeat until all meat is gone.  Place meatballs on a cookie sheet (with sides) lined with baking paper.  Roast in a preheated 325 degree F oven for 30 minutes.  While the meatballs are cooking, combine the beef stock with the cornstarch.  Heat on medium until the sauce begins to thicken.  After the sauce has thickened, add the 35%  cream and simmer.  Remove the cooked meatballs from the oven.  Strain off any excess liquid and add them to the sauce.  Simmer on low heat for 20 minutes.  Serve with egg noodles.
