1 x 14 oz can black beans drained and rinsed 2 x 28 oz cans kidney beans drained and rinsed
1 x 19 oz can tomato sauce 1 cup frozen corn
1 cup diced celery 1 cup diced carrots
1 cup diced green peppers 1 cup diced onions
2 cups water 1 tbsp garlic powder
2 tbsp chili powder 2 cups grated cheddar
2 tbsp vegetable oil
In a large pot, heat 2 tbsp of oil. Add the diced vegetables and frozen corn. Sauté for about 3 minutes stirring constantly. Add the beans, tomato sauce, water and spices. Reduce the heat to low and simmer covered for 2 hours stirring occasionally. Serve in large bowls topped with shredded cheddar cheese.
