Wellness Wednesday! Soft Chicken Tacos Recipe

Try our head chef’s soft chicken tacos recipe! Your children will love a healthy taco themed night for dinner!

Ingredients

2 lbs boneless chicken thighs            2 cups grated cheddar cheese

1 tsp chili powder                1 tsp Tex Mex seasoning

1 tsp garlic powder                2 tbsp vegetable oil

1 cup shredded lettuce                1 cup diced tomatoes

1 pkg 7” flour tortillas                1 cup sour cream

 

Directions

Heat a large skillet with 2 tbsp vegetable oil.  Thinly slice the chicken thighs and toss them with the seasonings.  Saute quickly in the heated pan.  Wrap the tortillas in foil and heat them in the oven at 200 degrees F.  Place the cooked chicken in the tortillas and top with cheese, lettuce, tomato and sour cream.
