Wellness Wednesday! Chicken Teriyaki Recipe

Ingredients

2 lbs boneless skinless chicken breast

½ cup gluten free soya sauce

3 tbsp orange juice concentrate

2 tbsp brown sugar

1 medium Spanish onion thinly sliced

½ green pepper cut into thin strips

½ red pepper cut into thin strips

1 cup thinly sliced carrot

1 tsp garlic powder

1 tsp fresh ginger

¼ tsp ground pepper

Directions

Cut the chicken breasts into strips about ½” wide.  Place all of the ingredients in a large bowl and mix them thoroughly.  Allow them to marinate for 4 hours.  Preheat the oven to 350 degrees F.  Lightly oil a casserole pan.  Add the chicken mixture to the pan and place in the oven for 45 minutes.  Stir occasionally for even cooking.  Remove from oven and serve with rice or noodles.
