Wellness Wednesday! Chicken Etouffee Recipe

Chicken Etouffee

Ingredients

2 lbs boneless skinless chicken breast

1 28 oz can diced tomatoes

1 medium Spanish onion diced

1 red pepper diced

1 green pepper diced

3 large carrots peeled and sliced

1 tbsp garlic powder

½ tsp thyme

½ tsp basil

1 tsp Cajun seasoning

2 tbsp canola oil

Salt and pepper to taste

Directions

Dice the chicken breast into large cubes (1 inch square). Dice the peppers and onions the same size as the chicken breast. Put the canola oil in a large stock pot or skillet. Heat the oil on medium high heat until it begin to smoke. Add the chicken and begin searing it evenly on all sides. Remove the chicken from the pan and add the diced peppers and onions. Sauté the peppers and onions for 2 minutes and add the cooked chicken. Add the can of tomatoes, carrots and seasonings and reduce heat to medium low. Cover and simmer for 45 minutes. Serve with rice and beans for a truly Cajun experience.
